Mellow acorn squash roasted with onions and blended with sage and cream to become a rich, velvety soup. Thick and satisfying with a touch of cayenne.
Category: Simple
A little more complex than the Beginner recipes, but still not requiring a lot of cooking experience. If you’ve been working on those and you want more options or more challenge, you can start adding these simple recipes to your repertoire! Also a great place to land if you already have a little bit of experience in the kitchen, but want to get more comfortable. If you want more, check out the Moderate category!
My Favorite Holiday Eggnog
I look forward to eggnog season every year; it’s one of my favorite holiday treats. I enjoy the store-bought stuff, but it’s not terribly high-quality, and the natural varieties have yet to impress me. I finally honed in on the right ratios and created this recipe: A smooth, pale yellow nog, flecked with just the right amount of nutmeg and perfumed with vanilla.
Green Quinoa With Feta
This quinoa bowl with pesto and green vegetables is wholesome and flavorful alone or topped with a poached or boiled egg. Asparagus and avocado are some of my favorite veggies to use, but you can choose from the list of ingredients based on what you’ve got.
Parmesan-Herb Delicata Rings
I was only recently introduced to delicata squash, but now I am an ardent fan. These delicata rings are one of my favorite things to do with it so far. The distinctive flavor of rosemary partners nicely with Parmesan cheese and the mellow sweetness of the delicata. As the squash softens in the oven the breading becomes enticingly crispy. Et viola! A tasty finger-food perfect for dipping in the accompanying yogurt sauce. Makes a great side with burgers too.
Salad Rolls (Gỏi Cuốn)
Hailing from Vietnamese cuisine, salad rolls can include a variety of fillings and make for a delicious and healthy appetizer or light meal. This recipe is more a of a guide–the exact amounts aren’t important, and you can try different filling combinations of your own. I’ve included the core ingredients and a suggested set of additional flavors to get you started, along with a recipe for peanut dipping sauce. If I’m being honest, I love peanut sauce so much that the rolls themselves are more of a vehicle…
Vegan “Chicken” Soup
Sometimes there’s just nothing like chicken soup, especially when it’s chilly outside or you’re coming down with a cold. Warm, mellow broth and classic ingredients combine for a dose of liquid comfort. This recipe’s got everything but the chicken and is a breeze to make!
Hearty Wholegrain Pancakes
This is my go-to (American) pancake recipe for everyday breakfasts because they’re completely whole grain and don’t have any extra sugar in the batter. The only downside (if you can call it that) to them is that they soak up lots of maple syrup, but if that’s a problem, they are delicious served with butter and jam or fruit compote instead.
Cupboard Curry
There are many, many kinds of curry. This one is very simple and makes a great weeknight dinner. You need a few core ingredients, and the rest can be decided based on what you have in your cupboard. I am especially fond of using root vegetables, peas, leafy greens, and cauliflower.
